Canyon Ranch is looking for a Sous Chef (Full time) at our Lenox, MA location.
As a Canyon Ranch Sous Chef, you would be responsible for ensuring food quality in both preparation and presentation. The Sous Chef is also responsible for upholding the policies and procedures of the kitchen and Canyon Ranch and compliance with Serf-Safe procedures. You will have the ability to coordinate minimal administrative responsibility with day to day on line operations.
Food Production: Ensures high and consistent quality of all menu items both in preparation and presentation: ensures that all recipes are followed exactly; checks the taste and texture of all the dishes before meal services; ensures “model” plates of menu items before each meal service. Daily Supervision: Provide daily supervision of culinary staff ensuring staff timeliness and preparedness for the shift; inspect stations for completeness and solving problems as they arise and being proactive about situations insuring a smooth shift. Also ensures standards for station breakdown/reset are followed at the end of the shift.
Health Standards & Safety: Ensures all health standards & procedures are in accordance with County Health code at all times, without exception. Ensures staff follow safety procedures in the kitchen. Reports any potential safety hazards to facilities and follows up to ensure resolution of potential problems.
Safety & Sanitation: Oversees preparation and presentation of all food in accordance with Canyon Ranch recipes, nutritional philosophy and quality standards to include handling and food storage that comply with the Health Department and Serv-Safe Procedures. Reports, documents and rectifies any known safety hazards, conditions or unsafe practices/procedures.
Canyon Ranch Food Philosophy: Understands and studies Canyon Ranch nutrition philosophy, menu ingredients, as well as the Ranch's overall operation, philosophy, activities and services in order to better answer guest and/or server questions.
Experience Required: 3-5 years of previous experience in same or related field
Education Required: Associate degree or two-year equivalent specialized training or experience required
Certifications/License: Serve Safe Manager Certification within 6 months of hire.
It's also preferred that you have supervisory/management experience in a quality resort, hotel or restaurant.
You will need to be flexible in working hours, as they include evenings, weekends and holidays.
To be successful, you will need to be service oriented and have excellent communication and organizational skills. You must be responsible, and neat and clean in appearance.
